Three-Bean Salad:

Ingredients:

-3 tbsp olive oil-1 tbsp lemon juice-1 tbsp tomato paste-1 tbsp chopped fresh chives, plus extra to garnish
-1 1/2 cups thin green beans, cut into thirds-1 1/2 cups canned soybeans, rinsed and drained
-1 1/2 cups canned red kidney beans, rinsed and drained
-2 tomatoes, chopped-4 scallions, trimmed and chopped
-1 cup feta cheese, cut into cubes-Salt and pepper
-Mixed Salad greens, ready to serve style

There are a lot of ingredients to this dish. You will notice that eating as a vegetarian is very hard to do. Try visiting a bulk store or a local grocery outlet store. These stores tend to provide you with better prices and package deals. This will make it a bit easier for you to afford these type of ingredients. Also, always remember that much of the leftover pieces you have from making the dish can be saved for making future dishes as well.

Your first step is to put the olive oil, lemon juice, tomato paste, light malt vinegar, and chopped fresh chives in a large bowl. You will need a large bowl because the contents are going to be mixed. Please make sure that you mix the contents throughly. This will help you separate the contents and ensure that the chives become covered in the oil, juice, paste, and vinegar.

Cook the thin green beans in a small pan of salter boiling water. The salt will add a bit of taste to the dish. Use as much salt at your discretion. Let the contents bowl in the pan for 4 to 5 minutes. Next, drain the beans and refresh them under cold water to prevent any further cooking. Once again, drain the green beans. You will then need to pat them dry with absorbent paper towels.

The next step is to add all the beans to the dressing, stirring well to mix. Grab all your remaining ingredients and get ready to add them next. Add the tomatoes, scallions, and feta cheese to the bean mixture you have created. You will need to toss the bean salad so that it gently becomes coated in dressing. Season the dish with the amount of salt and pepper you desire.

Arrange the salad greens onto serving plates. The final step is to pile the bean salad on top of the salad greens, garnishing with extra chives, and there you have it. You have created your very first vegetarian three-bean salad. One taste of this salad will wow your taste buds and make it a staple in your weekly diet. The dish is quick and easy to make, allowing it to be ideal to a busy lifestyle.
